تقلب در زعفران

به دلیل قیمت بالای زعفران، این ماده هدف تقلب قرار می‌گیرد. برای تقلب در زعفران، معمولاً از گیاهان ارزان و در دسترس، قسمت‌های کم‌اهمیت گیاه زعفران، املاح معدنی، رنگ‌زاهای مصنوعی، عوامل وزنی، مواد حیوانی و مواد مصنوعی استفاده می‌شود. نگرانی روزافزون درباره اصالت زعفران اهمیت روش‌های تحلیلی که امکان غربالگری سریع تقلب‌های احتمالی را فراهم می‌آورند، افزایش می‌دهد.

چندین روش برای تشخیص تقلب‌های زعفران استفاده می‌شود. در این فصل، روش‌هایی مانند تکنیک‌های کروماتوگرافی، طیف‌سنجی مادون قرمز، rezonance مغناطیسی هیدروژن (1H)، تکنیک‌های مولکولی و بینش‌های الکترونیکی مورد بحث قرار می‌گیرند. در میان این روش‌ها، طیف‌سنج‌های رزونانس مغناطیسی هسته‌ای با میدان‌های مغناطیسی بالا به‌عنوان حساس‌ترین روش برای بررسی تقلب در زعفران شناخته می‌شوند.

“Due to the high price of saffron, it is a target for fraud. For saffron adulteration, normally inexpensive and available plants, less important parts of the saffron plant, minerals, artificial colorant, weight agents, animal substances and artificial substances are used. The increasing concern for authenticity of saffron makes analytical methods that allow for rapid screening of potential adulterations important.

Several methods are used for detecting saffron adulterations. In this chapter, methods such as chromatographic techniques, infrared spectroscopy, 1H nuclear magnetic resonance, molecular techniques, and electronic noses are discussed. Among these methods, nuclear magnetic resonance spectrometers with high-field magnets are believed to be most sensitive method for investigation of adulteration in saffron.
