Safranal, crocin, and picrocrocin are three of its primary components, and they give saffron its characteristic fragrance, color, and flavor, correspondingly. The crimson Saffron stigma and styles are considered an essential component in textile, pharmaceutical, cosmetic, and perfume production. The global cultivation of saffron has averaged to be approximately 300 tons annually and is anticipated to expand up to 12 percent in the next five years. Saffron’s socioeconomic significance throughout history has been widely highlighted, but it was once regarded for its fragrance, medicinal and dyeing properties. Presently, saffron is majorly marketed for its use as a culinary spice. This chapter focuses on the current knowledge about the economic importance (therapeutic uses, traditional uses, cosmetology, perfumery uses, culinary uses, coloring uses, and general uses) of saffron, one of the most valuable spices worldwide.
