مطالعه زیست‌پسماندهای گل زعفران (Crocus sativus L.) ناشی از نیاز به توسعه راهبردهای پایدار برای ارزش‌آفرینی از محصولات فرعی agro-industry است. در یک زمینه جهانی که تولید و مصرف مسئولانه محورهای اصلی دستور کار توسعه پایدار هستند، تحلیل پتانسیل زیست‌پسماندهای تولید شده توسط صنعت زعفران ضروری است، به ویژه با توجه به اینکه بیش از ۹۰٪ از زیست‌توده گل بدون استفاده کارآمد دور ریخته می‌شود. کشت Crocus sativus عمدتاً به سمت جمع‌آوری کلاله‌ها، که در تولید زعفران استفاده می‌شود، هدایت می‌شود. با این حال، این فرآیند مقدار قابل توجهی زیست‌پسماند آلی، عمدتاً کاسبرگ‌ها، گلبرگ‌ها، پرچم‌ها و تپال‌ها تولید می‌کند که علی‌رغم محتوای احتمالی ترکیبات زیست‌فعال با ارزش، اغلب هدر می‌روند. این هدررفت نه تنها یک مشکل زیست‌محیطی است، بلکه از دست دادن منابعی با ارزش افزوده بالقوه را نیز نشان می‌دهد. این تحقیق از دیدگاه‌های مختلفی توجیه می‌شود: زیست‌محیطی، اقتصادی و علمی. از دیدگاه زیست‌محیطی، تجمع زیست‌پسماندهای گل می‌تواند به تکثیر میکروارگانیسم‌های بیماری‌زا کمک کرده و تأثیرات منفی بر اکوسیستم‌های محلی ایجاد کند. از این نظر، توسعه راهبردهایی برای ارزش‌آفرینی می‌تواند این اثرات را کاهش داده و اقتصاد دایره‌ای را ترویج کند. از دیدگاه اقتصادی، ارزش‌آفرینی از زیست‌پسماندهای Crocus sativus می‌تواند درآمد اضافی برای تولیدکنندگان ایجاد کند. از دیدگاه علمی، این مطالعه به دنبال ارائه دانش در مورد ترکیب بیوشیمیایی و پتانسیل زیست‌پسماندهای گل Crocus sativus است. بنابراین، این رساله دکتری با نیاز به ترویج مدیریت کارآمدتر و پایدار زیست‌پسماندهای ناشی از کشت Crocus sativus توجیه می‌شود.

The study of the floral bio-residues of the saffron plant (Crocus sativus L.) responds to the need to develop sustainable strategies for the valorization of agro-industrial by-products. In a global context where responsible production and consumption are central axes of the sustainable development agenda, it is essential to analyze the potential of the bio-residues generated by the saffron industry, especially considering that more than 90% of the floral biomass is discarded without efficient use. The cultivation of Crocus sativus is mainly oriented to the collection of stigmas, used in the production of saffron, one of the most valued spices worldwide. However, this process generates a significant amount of organic bio-residues, mainly calyxes, petals, stamens and tepals, which, despite their possible content of bioactive compounds of interest, are often wasted. This waste not only represents an environmental problem, but also a loss of resources of potential added value. This research is justified from various perspectives: environmental, economic and scientific. From an environmental point of view, the accumulation of floral bio-residues can favor the proliferation of pathogenic microorganisms and generate negative impacts on local ecosystems. In this sense, developing strategies for their revaluation would mitigate these effects, promoting a circular economy and reducing the environmental burden of the saffron industry. Furthermore, the use of these bio-residues as raw materials in other industries could contribute to the reduction of waste generation and better management of natural resources. From an economic perspective, the valorization of Crocus sativus bio-residues could generate additional income for producers as they can be applied in the cosmetic, pharmaceutical, food and other sectors. The extraction of natural pigments, antioxidants and therapeutic compounds would boost the development of products of high commercial value, promoting innovation and a more sustainable economy. Within the framework of the circular economy, this research seeks to revalue these bio-residues to reduce dependence on primary resources and optimize their use in new value chains, promoting more efficient and sustainable production models. In the scientific field, this study seeks to provide knowledge about the biochemical composition and potential of Crocus sativus floral bio-residues, a research area that, despite its relevance, has been scarcely explored, presenting a focus on the application of functional foods. Several studies have reported the presence of secondary metabolites with potential health benefits, which justifies the need to deepen their characterization and possible applications. In this sense, this research will not only contribute to the generation of new scientific knowledge, but will also lay the foundations for the development of products derived from these bio-residues with potential benefits for health and industry. Therefore, this doctoral thesis is justified by the need to promote a more efficient and sustainable management of the bio-residues generated by the cultivation of Crocus sativus, by studying its chemical and biological properties, as well as its potential application in different industries. This is expected not only to generate new scientific knowledge, but also to contribute to the development of innovative and sustainable solutions that allow these bio-residues to be transformed into high value-added resources.
