نقش نوآوری در توسعه کسب‌وکارهای صنایع تبدیلی و فرآوری زعفران

توسعه نوآوری‌های مؤثر در کسب‌وکارها به دلیل سطح باالی عدم قطعیت و پیچیدگی‌های موجود، یک چالش اساسی شناخته می‌شود. پیشرفت‌های سریع فناوری و ضرورت نوآوری، منجر به تغییرات گسترده‌ای در کسب‌وکارها در سطح جهانی شده است. کسب‌وکارهای کشاورزی، به ویژه در بخش‌های تولید، فرآوری، بسته‌بندی، توزیع و بازاریابی، اجزای مختلف زنجیره ارزش را به یکدیگر متصل می‌کنند. در این میان، صنعت زعفران با ویژگی‌های منحصربه‌فرد خود، جایگاه مهمی در این فرآیند دارد. عوامل متعددی بر موفقیت یا عدم موفقیت کسب‌وکارهای صنعت زعفران تأثیرگذار هستند و در این بین، نوآوری به عنوان رکن اصلی توسعه اقتصادی و راهبردی برای ارتقای کسب‌وکارهای صنعت زعفران شناخته می‌شود.

این پژوهش به بررسی نقش نوآوری در توسعه کسب‌وکارهای صنایع تبدیلی و فرآوری زعفران در استان خراسان رضوی می‌پردازد. جامعه آماری مطالعه را شرکت‌های فرآوری زعفران در خراسان رضوی تشکیل می‌دهند و نمونه‌ای به حجم 120 شرکت با روش نمونه‌گیری تصادفی طبقه‌ای در سال 1403 انتخاب و مورد تحلیل قرار گرفتند. نتایج مدل‌سازی معادلات ساختاری نشان داد که نوآوری فناوری بر نوآوری محصول، فرآیند و بازار تأثیر مثبت دارد. علاوه بر این، تأثیر مثبت نوآوری تحقیق و توسعه بر نوآوری محصول، فرآیند، سازمانی و بازار تأیید شد. در نهایت نتیجه گرفته شد که نوآوری محصول و فرآیند بر توسعه کسب‌وکارهای صنایع تبدیلی و فرآوری زعفران اثر مثبت دارند.

بر این اساس پیشنهاد می‌شود شرکت‌ها با بهره‌گیری از فناوری‌های بومی‌سازی شده مانند خشک‌کن‌های خورشیدی و توسعه همکاری‌های تحقیقاتی با دانشگاه‌های منطقه‌ای، محصولات نوآورانه با ارزش افزوده باال تولید کنند. همچنین، تقویت زیرساخت‌های بسته‌بندی هوشمند و بازاریابی دیجیتال می‌تواند مسیر توسعه پایدار و صادرات‌محور این کسب‌وکارها را هموار سازد.

Development of effective innovations in businesses is recognized as a fundamental challenge due to the high level of uncertainty and complexities involved. Rapid technological advancements and the necessity for innovation have led to widespread changes in businesses globally. Agricultural businesses, especially in production, processing, packaging, distribution, and marketing sectors, connect various components of the value chain. Within this context, the saffron industry, with its unique characteristics, plays a crucial role in this process. Several factors influence the success or failure of saffron industry businesses, and among these, innovation is seen as the main pillar of economic and strategic development for enhancing saffron industry businesses.

This study examines the role of innovation in development of saffron processing and transformation businesses in Khorasan Razavi province. The study population comprises saffron processing companies in Khorasan Razavi, with a sample of 120 companies selected through stratified random sampling and analyzed in 2024. The results of structural equation modeling showed that technological innovation positively impacts product, process, and market innovation. Additionally, the positive effect of research and development innovation on product, process, organizational, and market innovation was confirmed. Ultimately, it was concluded that product and process innovation have a positive effect on development of saffron processing and transformation businesses.

Accordingly, it is suggested that companies produce innovative products with high added value by utilizing localized technologies such as solar dryers and developing research collaborations with regional universities. Also, strengthening smart packaging and digital marketing infrastructure can pave the way for sustainable and export-oriented development of these businesses.
