روش‌های طیف‌سنجیِ احراز اصالت و کنترل کیفیت گل‌های خوراکی برای کاربردهای غذایی

تقاضای جهانی برای گل‌های خوراکی به دلیل کاربردهای متنوع آن‌ها در صنایع غذایی، فرآورده‌های سلامت‌زا و حوزه پزشکی افزایش یافته است. با این حال، مسائلی همچون شناسایی گونه‌ها، تقلب، آلودگی و کیفیت، بهره‌گیری از روش‌های پیشرفته را برای احراز هویت کیفیت گل‌های خوراکی ضروری می‌سازد. روش‌های سنتی پرهزینه و زمان‌بر هستند و نیازمند نیروی کار بسیار ماهر و تخصص فنی می‌باشند. روش‌های طیف‌سنجی، از جمله طیف‌سنجی فروسرخ تبدیل فوریه، فروسرخ نزدیک و طیف‌سنجی رامان، کارآمد، سریع و غیرتخریبی بوده و بینش سریعی از ساختار شیمیایی و اصالت گل‌های خوراکی فراهم می‌کنند. این مرور، پیشرفت‌های اخیر در روش‌های طیف‌سنجی برای احراز هویت گل‌های خوراکی، از جمله تشخیص تغییرات شیمیایی و تضمین یکپارچگی محصول را به‌طور نظام‌مند خلاصه می‌کند. هدف اصلی، بررسی کاربردهای روش‌های طیف‌سنجی برای ارزیابی تغییرات کیفیت گل‌های خوراکی در حین فرآوری برای کاربردهای غذایی است. فنون طیف‌سنجی، مانند طیف‌سنجی فروسرخ تبدیل فوریه، فروسرخ نزدیک و رامان، جایگزین‌هایی سریع، دقیق و غیرتخریبی برای احراز هویت ترکیب و کیفیت گل‌های خوراکی هستند. این روش‌ها تشخیص ترکیبات زیست‌فعال، تمایز گونه‌ها و شناسایی مواد تقلبی را با حداقل آماده‌سازی نمونه ممکن می‌سازند. علاوه بر این، مدل‌های کمومتریک (شیمی‌سنجی) تحلیل داده‌ها را بهبود بخشیده و امکان طبقه‌بندی خودکار و نظارت لحظه‌ای بر کیفیت گل‌های خوراکی را فراهم می‌کنند.

The global demand for edible flowers has increased due to their diverse applications in food, nutraceuticals, and the medical field. However, issues of species identification, adulteration, contamination, and quality necessitate the use of advanced methods to authenticate product quality for edible flowers. Conventional methods are expensive, time‐consuming, and require highly skilled personnel and technical expertise. Spectroscopic methods, including Fourier transform infrared, near‐infrared, and Raman spectroscopy, are efficient, fast, and non‐destructive, providing rapid insight into the chemical structure and authenticity of edible flowers. This review systematically summarizes the recent advances in spectroscopic methods forauthenticating edible flowers, including the detection of chemical changes and ensuring product integrity. The primary goal is to examine the applications of spectroscopic techniques for assessing quality changes in edible flowers during processing for food applications. Spectroscopic techniques, such as FT‐IR, NIR, and Raman spectroscopy, are rapid, accurate, and non‐destructive alternatives for authenticating the composition and quality of edible flowers. These methods enable the detection of bioactive compounds, differentiation of species, and identification of adulterants with minimal sample processing. Further-more, chemometric models enhance data analysis, allowing for automated classification and real‐time quality monitoring of edible flowers
