در سه دهه گذشته، علاقه جامعه علمی به بررسی استفاده از زعفران (Crocus sativus L.) به عنوان یک عامل درمانی یا پیشگیرانه برای تعدادی از بیماریها افزایش یافته است. هدف این مرور بررسی نقش درمانی زعفران و محصولات آن در حفاظت قلبی، تصلب شرایین، دیسلیپیدمی، فشار خون شریانی سیستمیک (HAS)، دیابت، مقاومت به انسولین و چاقی است. بیشتر خواص درمانی زعفران به دلیل وجود کاروتنوئیدها (کروسین، کروستین و سفرانال) است که نقش مهمی در آنتیاکسیدان و ضد التهاب دارند، سایتوکینهای پیش التهابی و گونههای فعال اکسیژن را سرکوب میکنند، استرس اکسیداتیو، متابولیسم لیپید پراکسید، اختلال عملکرد اندوتلیال، تصلب شرایین، فشار خون بالا، دیسلیپیدمی، مقاومت به انسولین و اشتها را کاهش میدهند. شواهد بیشتری برای بررسی فواید و مکانیسمهای مولکولی اثر، دوزها و سمیت زعفران و ترکیبات آن در انسان مورد نیاز است.
Over the last three decades, the interest of the scientific community in investigating the use of saffron (Crocus sativus L.) as a potential therapeutic or preventive agent for a number of health conditions has increased. The purpose of this review is to examine the therapeutic role of saffron and its products in cardio protection, atherosclerosis, dyslipidemia, systemic arterial hypertension (HAS), diabetes, insulin resistance and obesity. Most of the therapeutic properties of saffron are due to the presence of carotenoids (crocin, crocetin and safranal) playing an important antioxidant and anti-inflammatory role, suppressing pro-inflammatory cytokines and reactive oxygen species, reducing oxidative stress, peroxidation lipid metabolism, endothelial dysfunction, atherosclerosis, hypertension, dyslipidemia, insulin resistance and appetite. Further evidence is needed to investigate the benefits and molecular mechanisms of action, doses, and toxicity of saffron and its constituents in humans.
