In recent years, one of the most important factors influencing the change in cropping patterns among Iranian farmers has been the issue of drought. Accordingly, one of the most common changes in cropping patterns is the tendency toward saffron cultivation, which can have various effects on economic, social, and environmental aspects. In this regard, this study examines the necessity of changing to an appropriate cropping pattern. The results of the studies indicate that despite wheat cultivation dominating more than 50 percent of the cultivated crop area, there has been a tendency to plant crops such as corn seeds, oilseeds, and some widely consumed legumes and vegetables, so that both the replacement effect and the expansion effect have been influential in changing the cropping pattern. Specifically, 58.7 percent of the changes in the cultivated area resulted from the expansion effect, and 41.7 percent of the changes were due to the replacement effect. Various studies have investigated farmers’ willingness to change cropping patterns toward saffron cultivation, and the results showed that out of 88 percent of areas with favorable ecological conditions, 87 percent of the agricultural regions have incorporated saffron cultivation into their farming, and only one percent of the areas have shown no interest in saffron cultivation. The cropping pattern, as one of the influential factors in the growth and development of the agricultural sector, is particularly important in developing countries that face population growth, increased demand, and a relative improvement in people’s living standards. Saffron (Crocus sativus L.) is a perennial plant that primarily grows in the dry and semi-dry regions of the country. Despite saffron’s adaptation to these regions, evaluating the trend of changes in saffron cultivation over the past 93 years shows that the cultivation of this product has significantly increased; saffron is now grown in 74 provinces of the country. Research findings indicate that geographical factors and the attractiveness of consumer markets are the most important factors driving the expansion of saffron cropping patterns in the region. Saffron is a valuable export product that is cultivated in some parts of the country. Its high economic value in global markets, along with the employment and income generated from its cultivation, creates a significant economic return for this product.
