زعفران (کروکوس ساتیوس L.): طلای ادویه‌ها – مروری جامع

زعفران (Crocus sativus L.) یک گیاه علفی سه‌تایپ مونوسپرم است که گران‌ترین ادویه جهان را تولید می‌کند.. ترکیبات اصلی آن، کروسین، پیکروکروسین و سافرنال، به ترتیب مسئول رنگ، طعم و عطر آن هستند. گیاه زعفران ادویه‌ای با رنگ قرمز تولید می‌کند که در صنایع داروسازی، آرایشی، عطرسازی و رنگرزی نساجی اهمیت دارد. ایران تقریباً ۹۰٪ از کل تولید جهانی را تولید می‌کند.

انتظار می‌رود بازار زعفران در دوره پیش‌بینی شده بین سال‌های ۲۰۲۰ تا ۲۰۲۷ با ۱۲.۰۹٪ رشد کند. این مقاله مروری بر دانش فعلی درباره رده‌بندی، پراکندگی جغرافیایی، زیست‌شناسی تولیدمثلی، ترکیب شیمیایی، کاربردهای درمانی و سنتی و فناوری‌های کشاورزی گران‌ترین محصول ادویه‌ای جهان، زعفران، ارائه می‌دهد.

“Safron (Crocus sativus L.) is a monocotyledonous herbaceous triploid plant that produces the most expensive spice in the world. Its main constituents, crocin, picrocrocin, and safranal, are responsible for color, taste, and aroma, respectively. The safron plant produces a red-colored spice that is important in pharmaceutics, cosmetics, perfumery, and textile dye-producing industries. Iran produces almost 90% of the total world production.

The safron market is expected to grow by 12.09% in the forecast period 2020 to 2027. This paper reviews the current knowledge about the taxonomy, geographical distribution, reproductive biology, chemical composition, therapeutic and traditional uses, and agro-technology of the world’s most expensive spice crop, safron.”
