This paper refers to the saffron of Kozani. The saffron of Kozani is known worldwide and is used in herbal drinks and spices. Greece is the third country in the world in saffron production, with the city of Kozani as its flagship. The study of the saffron of Kozani is carried out in the context of highlighting a part of the intangible cultural heritage of the way it can contribute to tourism. Aspects of tourism, such as gastronomic (which can be based on saffron), and which we study as an element of intangible cultural heritage. Then, the history of Kozani is described in detail, as well as the tourist and economic activity of the region. It starts from the Neolithic era and is inextricably linked to saffron production. Also, a factor of the region with great economic and tourist importance is electricity generation. Kozani saffron is a unique product that contains various unique ingredients that make it special both in its cultivation and in the way it is harvested. It is worth noting that thanks to its specific characteristics it has beneficial and medical – therapeutic properties (such as antioxidant, anti-inflammatory, analgesic, anti-cancer and also helps with memory). The uses that saffron has in medicine, dyeing, food, confectionery, etc. make the herb itself unique and give it a prominent position among other types of herbs. Finally, the reputation and image of the product should be strengthened as it constitutes a strong integral part of heritage.
